1、CAC/RCP30Page1of16INTRODUCTIONTheRecommendedInternationalCodeofHygienicPracticefortheProcessingofFrogLegswasadoptedbytheCodexAlimentariusCommissionatits15thSessionin1983.ThisCodeofHygienicPracticeistoberegardedasadvisoryinnatureandindividualgovernmentsshoulddecidewhatusetheywi
2、shtomakeoftheCode.TheCommissionhasexpressedtheviewthatcodesofpracticedealingwithspecificcategoriesoffoodsmightprovideusefulchecklistsofrequirementsfornationalenforcementauthorities.RECOMMENDEDINTERNATIONALCODEOFHYGIENICPRACTICEFORTHEPROCESSINGOFFROGLEGSCAC/RCP30-19831.SECTIONI
3、-SCOPEThisCodeofHygienicPracticeappliestofroglegsderivedfromediblefrogs.Itcontainstheminimumrequirementsofhygieneintheproduction,processing,handling,packing,storage,transportationanddistributionoffroglegstoensureahealthfulandwholesomesupplyofthisproduct.2.SECTIONII-DEFINITIONS
4、ForthepurposesofthisCodethefollowingexpressionshavethemeaningstated:2.1Chillingmeanstheprocessofcoolingtoatemperatureapproachingthatofmeltingice;2.2Contaminationmeansoccurrenceofanyobjectionablematterintheproduct.2.3Disinfectionmeansthereduction,withoutadverselyaffectingthefoo
5、d,bymeansofhygienicallysatisfactorychemicalagentsand/orphysicalmethods,ofthenumberofmicroorganismstoalevelthatwillnotleadtoharmfulcontaminationoffood.2.4Establishmentmeansanybuilding(s)orarea(s)inwhichfoodishandledafterharvestingandthesurroundingsunderthecontrolofthesamemanage
