1、CAC/RCP13Page1of30RECOMMENDEDINTERNATIONALCODEOFHYGIENICPRACTICEFORPROCESSEDMEATANDPOULTRYPRODUCTSCAC/RCP13-1976,Rev.1(1985)ExplanatoryPrefaceA.TheCodehas,asfaraspossible,beenmadeconsistentwiththelay-outandcontentoftheGeneralPrinciplesofFoodHygiene.B.TheHazardAnalysisCriticalControlPoint(HACCP)Syst

2、emhasbeenappliedtotheCode.TheHACCPSystemconsistsof:(1)anassessmentofhazardsassociatedwithgrowing,harvesting,processing/manufacturing,marketing,preparationand/oruseofagivenrawmaterialorfoodproduct;(2)determinationofcriticalpointsrequiredtocontrolanyidentifiedhazard(s);and(3)establishmentofprocedures

3、tomonitorcriticalcontrolpoints.ThecriticalcontrolpointshavebeenidentifiedintheCodeandexplanatorynotesdescribingtheriskandgivingthetypeandfrequencyofcontrolstobeappliedhavebeeninsertedinconnectionwiththerelevantparagraphs(markedasCCP-Notes).C.InthepreparationofthisCoderecognitionhasbeengiventothenee

4、dtoavoidprecludingtheadoptionofnewtechnologicaldevelopmentsprovidedtheseareconsistentwiththehygienicproductionofwholesomemeatproducts.Whenintroducingnewtechnology,careshouldbetakentoensurethatitdoesnotcreatehazardstohealth,e.g.newrapidmethodsforproductionoffermentedsausagesrequirespecialcontrolstop

5、reventstaphylococcaltoxinformation.D.ProperlytrainedinspectorsandpersonnelandanadequatesanitaryinfrastructurearenecessaryinordertoimplementtheCodesatisfactorily.E.Itshouldbenotedthatmanysmallmanufacturers,supplyingalimitednumberofretailoutletsonly,donotpackagetheirmeatproductsbeforesale.Itisnotposs
