2、theyhavebeenchilledorfrozenandareintendedforhumanconsumption,whetherbydirectsaleassuchorthroughfurtherprocessing.Itappliestoallpremisesinwhichpoultryisslaughtered,packed,orotherwisehandledinthecourseofpreparation,andallpremisesinwhichpoultrypartsareprocessed,packed
3、,orotherwisehandledinthecourseofpreparation.Italsoappliestoconditionsoftransportfromallsuchpremises.2.SECTIONII-DEFINITIONSForthepurposesofthisCode:2.1Poultrymeansanydomesticatedbirdincludingchickens,turkeys,ducks,geese,guinea-fowls,orpigeons.2.2Carcasemeansthewhol
4、eofabirdafterstunning,bleeding,pluckingandeviscerating.However,removalofthekidneys,ofthelegsatthetarsus,oroftheheadisoptional.2.3Gibletsmeanstheliverfromwhichthebilesac(gallbladder)hasbeenremoved,theheartwithorwithoutthepericardialsacandthegizzardfromwhichthelining
5、andcontentshavebeenremovedandanyothermaterialconsideredasediblebytheconsumingcountry,providedthatallsuchmaterialhasbeenproperlytrimmedandwashed.3.SECTIONIII-RAWMATERIALREQUIREMENTS3.1EnvironmentalHygieneinRawFoodMaterialProductionAreasNote:RecommendationsinthisSect
6、ionarenotdesignedtocovertheveryimportantquestionsofhygieneanddiseasecontrolinpoultrygrowingandrearingareas.ThesefactorshaveaparticularbearingonthisCodebutaretheresponsibilityoftheofficialagencyhavingjurisdiction.3.1.1Sanitarydisposalofhumanandanimalwastes.Adequatep
7、recautionsshouldbetakentoensurethathumanandanimalwastesaredisposedofinsuchamannerasnottoconstituteapublichealthorhygienichazardandextremecareshouldbetakentoprotectCAC/RCP14Page2of11productsfromcontaminationwiththesewastes.Alldroppings,litter,scrapings,etc.fromcages
8、,cratesandvehiclesshouldberemovedatleastoncedaily.Arrangementsfromthedisposaloftraderefuseshouldbeapprovedbytheappropriateofficialagency.Aseparat
