2、2.SECTIONII-INTRODUCTION2.1GeneralThreetypesofdeteriorationcanoccurinoilsandfatsduringtheoperationsdealtwithinthisCode.Thesusceptibilityofoilsandfatstodeteriorationdependsuponanumberoffactorsincludingthetypeofoilorfat,whetheritiscrude,partiallyorfully
3、refinedandwhetherimpuritiesarepresent.Theseshouldbeconsideredwhenstoringandtransportingtheoil.2.1.1OxidationContactofoilsandfatswithoxygen,presentintheatmosphere,causeschemicalchangesintheproductwhichdowngradethequality.Someoftheeffectsofoxidationmayb
4、erectifiedwithinanedibleoilrefinerywithsomeextraprocessingand,therefore,extracost.However,theeffectsmaybesoseverethatrectificationisnotpossible.Muchcanbegainedbyreducingtheamountofaircontactandthisprincipleisthebasisofseveraloftherecommendations.Oxida
5、tionproceedsmorerapidlyastemperatureincreases,soeachoperationshouldbecarriedoutatthelowestpracticabletemperature.Therateofoxidationisgreatlyincreasedbythecatalyticactionofcopperorcopperalloys,evenwhentraceamounts(ppm)arepresent.Becauseofthis,copperand
6、copperalloysmustberigorouslyexcludedfromthesystems.Othermetals,suchasiron,alsohavecatalyticeffectsalthoughlessthanthatofcopper.2.1.2HydrolysisThebreakdownoffatstofattyacidsispromotedbythepresenceofwaterparticularlyathighertemperatures.Hydrolysisisalso
7、promotedbytheactionofcertainmicro-organisms.Tanksinwhichtheoilisbeingstoredorshippedshouldalwaysbecleananddrybeforeuse.2.1.3ContaminationUndesirablecontaminationmaybefromresiduesofapreviousmaterialhandledintheequipment,dirt,rain,seawaterorthroughtheac
