2、tsshouldbepreparedandhandledinaccordancewiththeRecommendedInternationalCodeofPractice–GeneralPrinciplesofFood1Hygiene,whicharerelevantforallfoodsbeingpreparedforhumanconsumption.Thesecodesofpracticeindicatethemeasuresthatshouldbeimplementedbyallpersonsthathavetheresp

3、onsibilityforassuringthatfoodissafeandsuitableforconsumption.2.DEFINITIONS2.“Blows”(Pops)meansin-shellnutswhichareunusuallylightinweightduetoextensivedamagefromphysiological,mould,insect,orothercausesandwhichcanberemoved,forexample,byanair-separationprocess.3.“Curing

4、”meansdryingofthein-shellpeanutstoasafemoisturelevel.4.“Farmersstock”peanutsmeansin-shellpeanutsastheycomefromfarms,afterseparationfromthevinesbyhandand/ormechanicalmeans.5.“Safewateractivity”meansawateractivityofin-shellpeanutsandshelledpeanutsthatwillpreventgrowtho

5、fmicro-organismsnormallypresentintheharvesting,processing,andstorageenvironment.6.Wateractivity(aw),isameasureoffreemoistureinaproductandisthewatervapourpressureofthesubstancedividedbythevapourpressureofpurewateratthesametemperature.Wateractivitiesabove0.70at25degree

6、sCelsius(77°Fahrenheit)are‘unsafe’asfarasgrowthofAspergillusflavusandAspergillusparasiticusandpossibleaflatoxinproductionareconcerned.3.RECOMMENDEDPRACTICESBASEDONGOODAGRICULTURALPRACTICES(GAP)3.1PRE-HARVEST7.Tobeeffective,pre-harvestcontrolofaflatoxincontaminationof

7、peanutsmusttakeintoconsiderationallthevariedenvironmentalandagronomicfactorsthatinfluencepodandseedinfectionbytheaflatoxin-producingfungi,andaflatoxinproduction.Thesefactorscanvaryconsiderablyfromonelocationtoanother,andbetweenseasonsinthesamelocation.Someenvironment

8、smaybeparticularlyfavourabletofungalinfectionandsubsequentaflatoxincontaminationofgroundnuts,andinthesecircumstancesitwouldbenecess
