6、value,anisidinevalue,polarcomponent,FFA,totalphenolscontentofcamelliaoilwerestudiedtojudgethequalityofcamelliaoilduringfrying.[Result]Itwasprovedthatduringfryingprocesswithprolongedfryingtimeandelevatedfryingtemperature,theacidvalue,peroxidevalue,carbonylvalue,anisidinevalueandpolarcompoundscon
7、tentincamelliaoilincreased,iodinevalueandtotalphenolscontentdisplayedadecrease.Andthesaturatedfattyacidandmonounsaturatedfattyacidcontentsincamelliaoilincreased,thecontentofpolyunsaturatedfattyacidsreduced.After20h,thetotalphenolscontentdecreasedquicklyat160,180and200℃,andat32hthelossratioofth
