2、VPPisappropriatetotheirintendeduse;and(ii)principlesfortheappropriatelabellingoffoodscontainingVPP.2.SCOPEThesegeneralguidelinesareintendedtoapplytoallsituationsinwhichproteinsderivedfromvegetablesourcesotherthanSingleCellProteinareutilizedinfoods.3.DEFINITIONSAvailableAmi

3、noAcids:AminoAcidsfromfoodproteinsthatareabsorbedandareavailableformetabolism.AminoAcidScore(formerlychemicalscore):(mgofthelimitingaminoacidin1.0goftestprotein)/(mgofthesameaminoacidin1.0gofproteinasdefinedbythereferenceaminoacidpattern).Bioavailability:theextenttowhichan

4、aminoacidorotheressentialnutrientisabsorbedandavailableformetabolism.Complementation(ofproteins):theincreaseinproteinnutritionalvalueachievedbymixingtwoproteins,whichhavedifferentlimitingaminoacids,inthoseproportionswhichresultintheproteinqualityofthemixturebeinghigherthan

5、thatofeitherofthecomponentproteinoccurswhenthefirstproteinhasanexcessoftheaminoacidwhichislimitinginthesecondproteinandviceversa.Limitingaminoacid:theessentialaminoacidofafoodproteinpresentinthelowestproportionrelativetotheamountofthataminoacidintheReferenceAminoAcidPatter
