2、剂、香精和稳定剂而制成的一种营养丰富,风味独特的产品。试验中分别研究了单因素人参果原汁的添加量、白砂糖添加量、柠檬酸添加量和CMC添加量对人参果保健饮料品质的影响。通过正交实验,以感官评定为主要依据,并结合理化指标确定了人参杲保健饮料的关键工艺过程和工艺参数,丰富了保健饮料市场的品种,为人参果的综合利用提供了有效途径。⑵试验结果表明:人参果保健饮料的最佳配方为人参果原汁15%,白砂糠10%,柠檬酸0.30%,CMC0.06%o所得产品色泽均匀,香味协调,酸甜可口,具有一定的市场潜力。关键词:人参果保健饮料最佳配比稳定性AbstractGi
