1、摘要绿色产品受到越来越多的消费者认可，大部分的消费者认为绿色产品对人体健康更有利。餐饮业是与人们健康联系最密切的行业，于是餐饮企业提供绿色产品的能力和环保情况就显得更为重要。检测体系就是在这种情况下产生的一种管理思想。检测体系的管理主要依据科学的检测数据，目标是保证餐饮产品的质量和对环境的危害最小。本文首先阐述了中外绿色餐饮的管理思想及相关标准，研究了我国餐饮企业建立检测体系的重要性。并运用案例研究的方法，对百胜集团下属的肯德基在控制产品质量方面的经验进行了分析。然后以IS022000和绿色餐饮的理念为指导思想，确定了餐饮企业建立检测体系的模型，即生产

2、消费等过程的关键控制环节，包括原料采购、烹制、服务和清洗四个步骤，同时为了获得科学的数据，新增检测实验室这个部门，对涉及营养卫生等的各方面进行取样检测。并根据食品营养卫生学原理以及餐饮业生产过程中容易对环境产生危害的环节因素等，对上述的四个步骤再分别进行分解分析，确定每一个环节的检验项目。最后根据餐饮企业的生产实际，研究了我国餐饮企业实施检测体系的必要条件。从产品的安全性、营养卫生和环保三个方面对各个环节进行控制，这三个方面贯穿到了产品生产消费的各个环节，需要各部门各执其责。同时需要企业进行协调，建立领导小组，监督各个部门共同执行该体系。国家对餐饮业的
