2、验结果发现五种品牌牛奶均呈均一、稳定的形态,奶香味明显。其中,光明和蒙牛牛奶具有较明显脂质感和较低透明度.进口牛奶的奶甜味和奶香味略强于国产牛奶。感官嗜好性主成分分析的结果显示:决定牛奶受欢迎程度的主要因素为牛奶的奶香味、甜味、后味和口感,即牛奶的口味,其次为牛奶的质构特性。最后,发现利用电子鼻和电子舌均能较好区分五种不同品牌牛奶.牛奶制品的奶香味对电子鼻的区分结果起主导作用,而牛奶制品的奶甜味对电子舌的区分结果起主导作用。关键词:牛奶;感官评价;电子鼻;电子舌中图分类号:TS207.3文献标识码:A文章编号:1674—506X(
