2、minedbytheimportanceofthevarioushealthrisksthatcouldbeincurredbyconsumersofproductsderivedfromanimalfoodproducts.Onetypeofriskmayoccurifmeatishandledandconsumedfromanimalsexcessivelycontaminatedwithmicroorganismsortoxinsthatcouldaffectthehealthofconsumers.Thistypeofhe

3、althriskcanbeminimizedbyestablishingmeatinspectionprogrammesthatemphasizeappropriateandprovidespecificproceduresonhowtorecognizethesignsofdiseaseinfoodproducinganimals.Anotherkindofriskcanoccuriffoodanimalshavebeenraisedusingveterinarydrugsorpesticidesinaninappropriat

4、emanner.Theimproperuseofsuchchemicalscanresultinunsaferesiduesofthesesubstancesinfoodderivedfromthetreatedanimals.Thesafetyofthehumanfoodrequiresafullscientificevaluationoftherelativehazardaswellasquantityofadrugresidueremaininginthetissuesoftreatedlivestockandpoultry

5、whenusedaccordingtogoodveterinarypractices,andasystematicsetofproceduresthatwillensureeffectivecontrolofsuchresiduesinhumanfood.Inadditiontothehealthprotectionbenefitsinhavinganeffectiveresiduecontrolprogramme,acountrywithsuchaprogrammehasthecapabilitytoparticipateint

6、hecommunityoffoodtradingnationswithgreaterconfidence.Thisisbecauseaneffectiveresiduecontrolprogrammecanalsoserveasthefoundationforcertifyingthesafetyofthecountry'sexportedfoodproducts,aswellasprovideassuranceofsafetyofsuchproductsimportedintothecountry.Whenestablishin

7、gaprogrammeforcontrolofresiduesinfoods,itisimportanttodistinguishbetweenthenotionof"unbiasedstatisticalsampling",wherethesamplesareobtainedfromanimalsthatarepresentedforinspection,andthenotionof"biasedordirectedsampling",wheresamplesareobtainedfromsuspectfoodproducts.
