1、河北科技师范学院硕士学位论文山楂贮存期间黄酮含量变化及抗氧化活性的研究姓名:张春丹申请学位级别:硕士专业:果树学指导教师:杨晓玲201206中文摘要在我国,山楂有着悠久的药用历史,是中医药学中的重要药材。其味甘酸,性微温,具有良好的生津止渴,消积化食,活血化瘀,补脾健胃等作用,广泛应用于心脑血管疾病及炎症等方面的治疗。其黄酮成分具有明显而良好的调血脂保健功能,可清除人体自由基,具有抗癌、防癌、抗氧化、抗病毒等生理活性及药理作用。目前,以天然植物药为主的天然药物越来越被重视,因此山楂黄酮的研究具有重要的理论意义和实际价值。本试验以采自河北科技
2、师范学院山楂种质资源圃的‘敞口’、‘大金星’、‘大红’3个品种山楂为试材,分别在常温(.3~15℃)和4℃恒温条件下贮存6个月,每隔1个月取样1次测定果皮、果肉、果核总酚和黄酮的含量及黄酮代谢相关酶活性,监测贮存过程中山楂黄酮代谢变化。从样品还原能力、螯合金属离子能力、清除DPPH自由基、羟自由基、超氧阴离子自由基能力等方面研究了山楂黄酮提取液的体外抗氧化活性。结果表明:3个品种山楂中总酚和黄酮含量均为果皮>果肉>果核。常温和4℃恒温贮存过程中,山楂总酚和黄酮含量变化不大,说明贮存6个月对山楂中黄酮成分不会产生很大影响,但是鉴于常温贮存过程
