1、华中农业大学2011届硕士学位论文5.研究了不同浓度的海藻酸钠所成膜的性质,从莲藕失重率、L值和呼吸强度等指标的变化研究了海藻酸钠膜和蜂蜡/海藻酸钠复合膜对莲藕贮藏品质的影响,结果表明,浓度越高,膜厚度越大,透光率越低,而海藻酸钠涂膜,蜂蜡/海藻酸钠复合膜均对莲藕的保鲜有一定的积极作用。涂膜处理可以抑制莲藕水分的流失、呼吸作用、糖的消耗以及硬度的下降,但对莲藕的L值和PPO活性变化作用不是很明显,甚至出现副作用。6.配制了壳聚糖、壳聚糖/纳米SiO;和壳聚糖/纳米Si0,/氯化亚锡三种涂膜液,对莲藕进行了涂膜,以不涂膜莲藕为对照,置于O.IO'C贮藏,研究了壳聚糖及其复合
2、膜对莲藕贮藏保鲜过程中品质的影响。结果表明:壳聚糖/纳米SiO,组效果最好,有效地抑制了莲藕采后呼吸、失重、糖物质消耗、PPO活性升高、颜色变暗及硬度下降,而壳聚糖/纳米SiO。膜中添加氯化亚锡并不能对莲藕保鲜效果起到更好的作用。7.1.5%壳聚糖+o.5%Si0;+l%甘油的涂膜液涂膜处理莲藕后,置于O.10℃冰箱内,以95%酒精持续熏蒸15天,研究涂膜和酒精熏蒸共同作用下对莲藕的保鲜效果,结果表明酒精熏蒸可以完全阻止微生物的侵染,有效抑制莲藕呼吸,但经其处理的莲藕其多酚氧化酶(PPO)活性较高,表皮亮度较低,颜色较暗。关键词病原菌;分离;鉴定;涂膜:果蔬;保鲜2莲藕贮
