1、茶叶籽油精炼工艺条件对其质量指标的影响陈琳1卢红伶1胡文君1郑寨生2王少军3储开江3沈国新1裘晓云1*(浙江省农业科学院蚕桑研究所1,杭州310021;金华市农业科学研究院2,金华321017;嵊州市农林局3,嵊州312400)摘要茶叶籽油是一种新资源木本食用油,含有角鲨烯等丰富的活性功能物质。茶叶籽毛油含有一定的非甘油酯和强烈的苦涩味物质,经过精炼后才能成为食用油。本文研究了精炼5个工序工艺对茶叶籽油理化指标的影响,提出了一套茶叶籽油精炼加工技术。结果表明,精炼各工序的最优工艺为脱胶75℃,加水量为含胶量的3倍;
2、脱酸70℃,用碱量为超理论计算量20%;脱色100℃,脱色剂为油量2%的活性白土和1%的活性炭混合物;脱臭180℃,脱臭时间1.5h;脱蜡温度4℃。新工艺可有效地去除茶叶籽油中的不良成分和苦涩味,最大程度保留茶叶籽毛油的角鲨烯等活性成分,主要理化指标符合国家食用油质量标准和代表性木本油油茶籽油标准(GB/T11765)。关键词茶叶籽油;精炼工序;工艺参数;理化性状;活性营养中图分类号:TS225.6文献标志码:A文章编号:Effectsofrefining-parametersontheoilphysicochem
