3、yandacceptability,aredeterminedbytheresponsesoftheMFGMcomponentstothesetreatments.Thus,anunderstandingofthisuniquemembranesystemisimportantforproducingdairyproductswithconsistentproperties[3].Thenaturalfatglobulesinmilkarecoatedwithaprotectivelayergenerallyknownasthemilkfatglobulememb
4、rane(MFGM).Milkfatisamajorcomponentofmilk,thecontentisgenerallyaccountedfor3%to5%,andtheflavorofmilkplaysanimportantinfluence.MilkfattoDispersedintheformoffatglobulesinthemilkwasobservedunderamicroscopefortheballSphercalorellipticalshape,thesurfaceiscoveredwithafilmof5~10nm[4].TheMFGM
5、iscloselyinvolvedinnaturalprocessesinmilk(e.g.creamingandagglutination)andismarkedlyaffectedbytreatments,suchascooling,heating,andhomogenizationofdairyproducts[5].1.CompositionandstructureofMFGMTheamountandthecompositionofMFGMcanvaryconsiderablydependingonboththefatcontentandthefatglo
6、bulesize,whichare,inturn,affectedbyseveralfactors,suchasdiet,breed,healthandstageoflactationofcows.Forinstance,smallfatglobules,becauseoftheirlargesurfacearea,accountforalargeproportionofthetotalMFGMmaterial.Inaddition,milkhandlingproceduresduringandaftermilkharvesting,e.g.aging,agita
7、tion,airinclusion,temperaturechangesandheattreatments,mayaffectthecompositionofMFGM[6].Thetotalmassoffatglobulesthatisaccountedforbymembranematerialhasnotbeendeterminedwithcertainty.Anestimatedmassofthemembraneis2–6%ofthatofthetotalfatglobules.Proteinsandphospholipidstogetheraccountfo
