1、内容摘要近年来,饭店业竞争的加剧导致饭店逐渐开始关注饭店品牌建设问题,试图通过品牌化获取竞争优势。这其中,饭店品牌资产逐渐成为关注的焦点。本文从基于顾客评价的角度对饭店品牌资产展开论述,首先通过对国内外文献综述结合饭店产品或服务的特点,提出了饭店品牌的概念,即饭店品牌是一种“区别性信号’’,这一信号是饭店符号、产品或服务、文化、形象、承诺、情感等要素的综合体。基于此概念,饭店品牌资产就是顾客对这个信号的解读所形成的预期效用的变化,这种预期效用的变化为顾客的体验价值。之后,本文从认知心理学和信息经济学两个范式分别论述了饭店品牌资产的维度及关系,并提出了整合这两个范式下的饭店品牌资产维度关系
2、理论。基于这一理论提出了相关假设,并通过实证研究对这一理论进行了验证,得出了饭店品牌资产的几个重要为感知质量、品牌形象、品牌认知、品牌信任度、搜寻成本,其中,品牌信任度受感知质量、搜寻成本的影响,而品牌知识包括品牌认知和品牌形象。同时,本文还将这一理论应用于对饭店品牌资产的评估,特别是通过感知质量和品牌形象把饭店品牌资产划分为优质性、潜力型、危机型和幼稚型等四种,并针对每种类型分别提出了相应的管理对策:即优质型应“牢固基础,创新发展”;潜力型应“增加知识,适时过渡”;危机型应“夯实基础,审慎过渡";幼稚型应“基础入手,逐步过渡”。关键词:顾客;饭店品牌:饭店品牌资产;饭店品牌资产维度IV
