2、llo),keratin(typeIcytoskeletal9),keratin(typeIIcytoskeletalsarcalumeninprecursor、immunoglobulinheavychainconstantalpha1membraneboundisoform1,titinisoform1,F-actin-cappingproteinsubunitalpha一1.Thechangesintheabundanceoftheseidentifiedspotswerecorrelatedwellwiththestoraget
3、ime,sensoryscoreandKvalue.Moreover,theidentifiedproteinsmightplayanimportantroleinboayfunctions.Itisexpectedthattheseproteinspotscanbethebiochemicalmarkersevaluatingthepostmortemchangesinfreshnessduringrefrigeratedstorage.Coincidentally,sixproteinsofthesesuccessfullyiden
4、tifiedspotswerealsodetectedinthetreatedgroup.TheeffectofLysozymeandNisinonthefilletqualitywasstudiedbycolnparingtheabundanceofthesecommonidentifiedproteins.TheresultdemonstratedthatLysozymeandNisinmightdelaythedegradationofcertainproteinsanddelaythedeclineinfilletquality
