1、《果蔬贮藏与加工》教学大纲一、课程性质和任务果蔬贮藏与加工是高等职业学校园艺专业、食品加工技术专业必修的一门专业课程,通过教学使学生具备从事生产和经营所必需的果蔬贮藏加工的基本知识和基本技能,为学生就业、创业打下一定的基础。二、课程教学目标:本课程的教学目标是:使学生具备高技能型人才所必需的果蔬贮藏保鲜与加工基本知识和基本技能,具有较强的工作岗位适应能力、分析和解决实际问题的能力以及创新意识和职业道德意识。(一)知识教学目标1.让学生知道果蔬贮藏加工在我国国民经济中的重要作用;2.使学生掌握果蔬贮藏
2、的基本特性,呼吸强度与果蔬贮藏保鲜密切关系,乙稀代谢在果蔬贮藏保鲜过程中的重要作用;3.使学生了解果蔬中的化学成分及其在贮藏加工中的变化;4.使学生掌握果蔬加工的基本原理及加工产品的质量标准;5.使学生了解果蔬贮藏加工的最新发展动态;6.使学生认识副产品的综合利用与环境保护的关系。(二)能力教学目标1.熟悉果蔬贮藏的基本方法及贮藏过程中病虫害及预防措施;2.熟悉主要果蔬贮藏所需的温度、湿度、气体成分等环境条件;3.掌握主要果蔬贮藏保鲜的关键管理技术;4.学会果蔬加工中罐制品、干制品、速冻制品、糖制品
