6、onboththefatcontentandthefatglobulesize,whichare,inturn,affectedbyseveralfactors,suchasdiet,breed,healthandstageoflactationofcows.Forinstance,smallfatglobules,becauseoftheirlargesurfacearea,accountforalargeproportionofthetotalMFGMmaterial.Inaddition,milkhandlingproceduresduring

7、andaftermilkharvesting,e.g.aging,agitation,airinclusion,temperaturechangesandheattreatments,mayaffectthecompositionofMFGM⑹.Thetotalmassoffatglobulesthatisaccountedforbymembranematerialhasnotbeendeterminedwithcertainty.Anestimatedmassofthemembraneis2-6%ofthatofthetotalfatglobule
