7、·································································16[摘要]近十年以来我国餐饮业规模不断扩大,快餐占餐饮业的营业额比重也不断增加,中式快餐近些年随之崛起,占据了国内市场的一席之地,现代中式快餐逐渐效仿西式快餐的模式:操作标准化、配送工厂化、连锁规模化和管理科学化的理念,实现了新的突破。但随着快餐工业化大规模生产的发展,食品质量安全问题也随之突现。尤其是人们越来越强的健康意识和最近的食品质量安全问题相对峙,食品安全问题已经日益成为焦
8、点问题,作为快餐企业,如何让顾客吃得放心,吃得安心已经成为一个严峻的考验,如何做到这一点,这其中就要在日常的加工过程中建立和实施一系列的质量安全管理体系,来保障产品的安全可靠。本文研究了A公司,作为中式快餐行业中,仅有的几家实现工厂化生产的企业之一,是如何保障其产品的安全,从而在提高经济效益的基础上又增强了公司的竞争力。[关键词]食品质量管理;HACCP;5S;ISO2200014Fa
