2、(HPLC-ICP-MS)对富硒双歧杆菌菌粉中硒的形态进行研究。结果表明,富硒双歧杆菌菌粉及其胶囊制品中硒的含量分别为(168.11±2.26)μg/g和(15.68±0.07)μg/g。与市售富硒产品相比较,富硒双歧杆菌胶囊中硒的含量是富硒大米的100倍,但不及富硒酵母产品中硒含量的1/10。富硒双歧杆菌产品中硒形态非常复杂,且含有许多不明硒化物,但其主要含硒氨基酸为硒代蛋氨酸,占总硒含量的(59.55±0.13)%。关键词:富硒双歧杆菌;形态分析;高效液相色谱;电感耦合等离子质谱SeleniumContentandSpeciationofSelenium-enrichedBif
