1、摘要核桃油中不饱和脂肪酸含量较高,极不稳定,本实验采用不同方法提取核桃油井对核桃油中总黄酮含量进行了测定,选用辛烯基琥珀酸酯化淀粉和麦芽糊精复配作为微胶囊化核桃油的壁材,经过优化乳化配方和微胶囊化工艺对核桃油进行了良好的包埋。实验结果如下:1、三种提取方法中,核桃油的提取率大小依次为:索式提取法>超Il缶界C02流体萃取>压榨法:三种提取方法获得核桃油中总黄酮含量大小依次为:超I临界CO:流体萃取>压榨法>索式提取法。2、壁材直接影响微胶囊产品的功能特性,同时对产品的成本影响较大。通过壁材初选和复配试验在辛烯
2、基琥珀酸酯化淀粉HI.CAPl00中加入适量的麦芽糊精后作为璧材,对核桃油微胶囊化的效果最佳。3、综合单因素试验和正交试验,得出最佳微胶囊化核桃油的配方和工艺。辛烯基琥珀酸酯化淀粉HI-CAPl00与麦芽糊精的合适配比为0.6:0.4,载油量为40%,干物质含量为40%;在压力35~40MPa下高压均质2~3次、进风温度190’C、出风温度90"C的工艺条件下,核桃油的微胶囊化效率可达至JJ99%。4、对制各的粉末核桃油的质量进行了评定:产品外观洁白,有清香味,平均水分含量2.44%,密度0.439/cm,自
