2、versityHangzhou,310035,P.R.China一.塑兰三璧奎兰竺.兰兰竺兰圣——一————————————————————————一臭氧对副溶血性弧菌灭活机制的探索研究摘要IIYIlll2lllll5l《13llllllll7lllllllllll2llllY2531712副溶血性弧菌(Fibrioparahaemolyticus)为我国细菌性食物中毒的首要病原菌,常附着于海产品表面,人食用被污染的食品后可能会弓l发急性肠胃炎,患者常出现腹痛、恶一fi,、呕吐等症状,重症者甚至可能死亡。臭氧是一种高效清洁的化学杀菌剂,它在
3、食品加工过程中的应用已有许多研究,但其对副溶血性弧菌的影响尚未见报道。本文以副溶血性弧菌为研究对象,从细胞生物学角度分析臭氧胁迫下副溶血性弧菌细胞壁膜、胞内大分子物质以及遗传物质等的变化,进而采用RNA.Seq技术对不同浓度臭氧胁迫下副溶血性弧菌的转录组进行研究,对其中具有差异表达基因的功能进行注释并比较分析,旨在探索臭氧的杀菌机制。本文的主要研究结果如下:1.臭氧对于副溶血性弧菌是一种高效的灭菌剂,浓度为1.2mg/L的臭氧水处理lmin基口可100%杀灭108cfu/mL的副溶血性弧菌。响应面实验结果显示臭氧浓度、作用时间对灭菌效果影响
