3、hydrolyzatewiththemostpotentACEinhibitoryactivitywasobtainedby0.5wt.%±8hBacilluslicheniformisalkalineproteasehydrolysisafter3.0wt.%±3ha-amylasetreatmentofdefattedWG(IC50;0.37mgproteinml1).TheactivityofWGhydrolyzatewasmarkedlyincreasedbyODSandsubsequentAG50Wpu
4、rifications(IC;0.018mgproteinml1).Asaresultofisolationsbyhighperformanceliquidchro-50matographies,16peptideswiththeIC50valueoflessthan20mM,composedof2±7aminoacidresidueswereidentifiedfromtheWGhydrolyzate.Judgingfromthehighcontent(260mgin100gofAG50Wfraction)an
