3、桑果醋醋酸产量的影响,并采用响应面法优化其主要工艺参数,以获得各影响因子与醋酸产量的数学模型。【结果】发酵温度和醋酸菌接种量对桑果醋醋酸产量有极显著影响;发酵温度与接种量、发酵温度与酒精度间的交互作用对桑果醋酸产量也有极显著影响。桑果醋的最佳发酵工艺条件是:发酵温度30℃,酒精度8.55%vol。醋酸菌接种量7。16%,在此条件下桑果醋醋酸产量为75.95g/L,与理论值76.04g几接近。【结论】运用响应面法优化桑果醋发酵工艺是可行的,而且在实际生产中采用该工艺参数,可达到节约能源损耗、缩短生产周期、提高生产效率、增加经济效益的目标。关键词:桑果醋;发酵工艺;发酵温度
