3、ftheEuropeanParliamentandoftheCouncilof29April2004onthehygieneoffoodstuffs(1),andinparticularArticles4(4)and12thereof,(5)Thesafetyoffoodstuffsismainlyensuredbyapreventiveapproach,suchasimplementationofgoodhygieneWhereas:practiceandapplicationofproceduresbasedonhazardanalysisandcriticalcontrol
4、point(HACCP)principles.Microbiologicalcriteriacanbeusedinvalidationand(1)AhighlevelofprotectionofpublichealthisoneoftheverificationofHACCPproceduresandotherhygienefundamentalobjectivesoffoodlaw,aslaiddownincontrolmeasures.ItisthereforeappropriatetosetRegulation(EC)No178/2002oftheEuropeanParli
5、a-microbiologicalcriteriadefiningtheacceptabilityofthementandoftheCouncilof28January2002layingprocesses,andalsofoodsafetymicrobiologicalcriteriadownthegeneralprinciplesandrequirementsoffoodsettingalimitabovewhichafoodstuffshouldbelaw,establishingtheEuropeanFoodSafetyAuthorityandconsideredunac
6、ceptablycontaminatedwiththemicro-layingdownproceduresinmattersoffoodsafety(2).organismsforwhichthecriteriaareset.Microbiologicalhazardsinfoodstuffsformamajorsourceoffood-bornediseasesinhumans.(2)Foodstuffsshouldnotcontainmicro-organismsortheirtoxinsormetabolitesinquantitiesthatpresentanunacce
