1、・1・本科毕业论文(设计)题目:花生茎水溶性膳食纤维(SDF)的提取工艺研究花生茎水溶性膳食纤维(SDF)的提取工艺研究摘要釆用单•因素和正交实验探讨了解法提取花生杆中水溶性膳食纤维(SDF)的提取工艺。木瓜蛋口酶预处理的花生杆粉的最佳提取工艺条件为:纤维素酶浓度为1.0mg/ml,温度为40°C,pH值为4.8,水解时间为1小时。釆用上述最佳提取工艺制备SDF,得到的样品的酶解率为13.4%,聚合度为1.0036,SDF的得率为1.25%。屮性蛋白酶预处理的花生杆粉的最佳提取工艺条件为:纤维素酶浓度为0.5mg/ml,水解温度为40°C,pH值为4.4,水解时间为0.5小
2、时。采用上述的最佳工艺条件制备SDF,得到的样品的酶解率为14.10%,聚合度为1.1435,SDF的得率为2.23%。论文还研究了SDF的抗氧化活性。实验结呆表明,两种蛋口酶预处理的花生杆粉制备的SDF均具有清除径自由基、超氧阴离子自由基、DPPH自由基、铁述原能力和钳述原能力的抗氧化活性。关键词木瓜蛋白酶;中性蛋白酶;纤维索酶;水溶性膳食纤维;抗氧化活性-3-StudyonthetechnologyofextractingsolubledietaryfibrefrompeanutpowderAbstractSinglefactorandorthogonaldesigno
