6、网(www.freebz.net)GB19303-2003月口舌本标准是在总结我国熟肉制品生产加工企业的基本卫生情况,针对容易出现的问题,为提高熟肉制品卫生质量,规范生产加工行为而制定的。—本标准非等效采用了世界卫生组织和联合国粮农组织联合食品法典委员会(CAC)的《国际性推荐的肉禽制品卫生操作规范)(CAC/RCP13--1976,Rev.1(1985)中的卫生管理内容,并部分采用了GB2694-1990《肉类加工厂卫生规范》中关于熟肉制品加工卫生要求的内容。—本标准制定中吸收并采纳了《危害分析关键控制

7、点(HACCP)系统》的原则。—鉴于熟肉制品加工企业的规模和品种差别较大,为增强适用性,本标准部分条文以“宜”作为推荐性内容,以“必要时”作为建议性内容,以“应”和“不得”作为强制性内容。-—自本标准实施之日起,熟肉制品生产企业应根据本标准的要求,做好本企业生产加工过程的管理工作。同时,本标准也是卫生行政部门对熟肉制品生产企业进行卫生许可和监督管理的依据。本标准由中华人民共和国卫生部提出。本标准负责起草单位:卫生部食品卫生监督检验所。本标准参加起草单位:重庆市卫生防疫站、陕西省卫生防疫站、河南省卫生防疫站
