3、oodsarestronglyassociatedwithreducedrisksofmajorchronicdiseases,buttheconstituentsinplantsthatpromotehealthhaveproveddifficulttoidentifywithcertainty.This,inturn,hasconfoundedtheprecisionofdietaryrecommendations.Plantbiochemistrycanmakesignificantcontributionstohumanhealththroughtheidentificationandme
4、asurementofthemanymetabolitesinplant-basedfoods,particularlythoseknowntopromotehealth(phytonu-trients).Plantgeneticsandmetabolicengineeringcanbeusedtomakefoodsthatdifferonlyintheircontentofspecificphytonutrients.Suchfoodsofferresearchtoolsthatcanprovidesignificantinsightintowhichmetabolitespromotehea
5、lthandhowtheywork.Plantsciencecanreducesomeofthecomplexityofthediet-healthrelationship,andthroughbuildingmultidisciplinaryinteractionswithresearchersinnutritionandthepathologyofchronicdiseases,plantscientistscancontributenovelinsightintowhichfoodsreducetheriskofchronicdiseaseandhowthesefoodsworktoi
6、mpacthumanhealth.INTRODUCTIONoffood,thatplantsciencecouldcontributesignificantlytoaddressingthisGrandChallenge.ResearchonplantscanleadAmajorchallengeinhumanhealthoverthenext50yearswillbetotheidentificationofthosemetabolitesthatpromotehealthandintheareaofchronic,noncommunicablediseases,includingreduce
