3、evariationsinchemicalcomponentsconcentrationandqualitytraitsoftheseflourfractionsinwheatgrain.Inaddition,15NisotopeWasusedtotracetheNsourceforgrainprotein.Andfurtherstudiesinqualityformationandregulatedbynitrogenrateofwheatgrainwereinvestigated.1.Profilingchemicalcomponentsconc

4、entrationsandqualitytraitsofflourfromdifferentlayersofwheatgrainFlourfromdifferentlayerofwheatgrainsofZhengrnai9023withhi曲grainproteincontentandNingrnai13withlowgrainproteincontentwaspreparedusingapeelingmachine.Thevariationsinchemicalcomponentsconcentrationandqualitytraitsofth

5、eseflourfractionswereprofiled.Concentrationsofproteinanditscomponents,hi曲molecularweightgluteninsubunits(HMW-GS),thepastingtraits,SDS-sedimentationvolume,andswellingpowersignificantlydifferedbetweendifferentflourfractionsandbetweenculfivars.Ingeneral,concentrationsofamylose,amy

6、lopectin,numberpercentofA—andB-typegranule,gliadin,glutenin,gluteninmacropolymer(GMP)andHMW-GS,thepastingtraits,fallingnumber,sedimentationvolumeandswellingpowerincreasedalongwiththeflourpeeledfromtheoutertotheinnerpartsofgrain,andthenleveledoffintheinnerpart.Reversely,theratio
