3、evariationsinchemicalcomponentsconcentrationandqualitytraitsoftheseflourfractionsinwheatgrain．Inaddition，15NisotopeWasusedtotracetheNsourceforgrainprotein．Andfurtherstudiesinqualityformationandregulatedbynitrogenrateofwheatgrainwereinvestigated．1．Profilingchemicalcomponentsconc

6、lopectin，numberpercentofA—andB-typegranule，gliadin，glutenin，gluteninmacropolymer(GMP)andHMW-GS，thepastingtraits，fallingnumber,sedimentationvolumeandswellingpowerincreasedalongwiththeflourpeeledfromtheoutertotheinnerpartsofgrain，andthenleveledoffintheinnerpart．Reversely,theratio
