1、中南民族大学硕士学位论文摘要随着社会的发展，人民生活水平的提高，清真食品以其“绿色、纯净、无污染”的优良品质和富有特色的饮食文化内涵迎合了现代人对健康食品的新需求，清真食品的市场需求在日益扩大，清真食品行业面临着新的发展机遇。如何进一步挖掘和发扬清真食品所蕴涵的清真文化，如何使传统的家族式清真食品企业稳步推进改革，建立现代企业制度，实现科学管理，走上产业化发展的轨道，是当前民族工作的关注点之一，也是本论文的主要研究方向。 本论文以辩证唯物主义原理为指导，运用民族学田野调查的方法，通过在个案地点——河
2、南省驻马店市十三香集团进行深度参与观察、访谈、问卷调查等方法获取了第一手资料；并且查阅了一定的历史文献和运用历史学的文献法，查阅学术界已有的相关成果及相关资料，结合经济学原理和企业管理等方面的理论来分析研究清真食品产业化发展。 本论文全面阐述了清真食品行业发展的重要意义，认真分析了清真食品行业发展的现状，在前人研究的基础上，经过深入思考、全面调研，得出研究结论：清真食品要实现行业化发展，必须坚持“以产品质量为中心，建立现代企业制度为基础，强化成本管理，不断创新谋发展，建设企业文化增强核心竞争力，正确利
