3、,theesterificationsofphytosterolwitholeicacidcatalyzedbyCandidarugosalipaseinorganicsolventwerestudied.Theesterificationconditions(temperature,substratemolarratio,reactiontimeandcatalystamount)wereoptimizedbyresponsesurfacemethodology(RSM).Thephytoserollinoleicacidesterwas
4、alsopreparedvialipase-catalyzed.Thelipidmetaboliceffectof10equivalentintakesofphytoserololeic/linoleicacidestersandthatofdifferentintakesofthesameesterwerecompared.Theresultsdemonstratedthatthehighestphytoserololeicacidesteresterificationdegreeof77.43%wasobtainedundertheop
5、timizedconditions:temperatureof41℃,reactiontimeof19h,substratemolarratio(oleicacid:phytosterol)of2.4:1andcatalystamountof7%.ThechemicalstructureofphytoserololeicacidesterwasconfirmedbyFT-IRandGC-MS.Thepreparedphytosterol15estersdecreasedsignificantlyTC,LDL-C,LDL-C/HDL-C,Ap
6、oAⅠ,ApoAⅠ/ApoBinserumandliverweight,HI,hepaticTC,hepaticTG,whiletheyalsoincreasedsignificantlyHDL-CandApoBinserum.NosignificantchangeswerefoundintheconcentrationsofTG.Incontrast,linoleicacidestercouldhaveaadvantageeffectoncholesterol-loweringandantioxidantcapacityoveroleic
