3、rdsandControlsGuide.This“hands-on”portionoftheHACCPcourseiscriticaltotheoverallunderstandingoftheparticipants.Asillustratedduringtrain-the-trainercourses,instructorsshouldusethesemodelsduringworkshopstohelpparticipantsdeterminehazardsandpreventivecontrolsofseafoodproductsandprocesses.Thiswil
4、lhelpillustratethereasoningthatwillberequiredforHACCP-trainedindividualstodevelopsuccessfulHACCPprogramsfortheirownproductsorprocesses.WhilethesemodelsareanextremelyusefultoolforteachingdevelopmentofaHACCPplan,theycanalsobeusedforteachingandillustratingotherpointsor“teachablemoments”whenthes
5、tudentspresenttheirfinalhazardanalysisandHACCPplan.Forexample,ifthecurriculumexample(FreshMahi-mahiFillets)inthetrainingmanualwaschangedtoincludeuseofbarrierfilmandburiedinice,thentheinstructorcouldaskaboutwhatadditionalfoodsafetyhazardsmaybepresentandwhatmeasureswouldhavetobeemployedtodocum
6、entcontroloffoodsafetyhazardsthatarereasonablylikelytooccurinmodificationofthefreshmahi-mahimodel.Remember,thesemodelsareintendedtobeusedforteachingpurposesandmaynotreflecttheactualcommercialstepsusedbytheindustryparticipantsinyourclass.Aninstructormaywanttomodifytheprocessflowofamodelifitwo
