5、rs,whichreducetonitritesatcertainphysiologicalconditionsinthehumanbody.Theycausemetchemoglobinemyandproducecarcinogenicmatterslikenitrosoaminesanddifferenthealthdisturbancesaschangesinvitaminlevels,disturbanceinthyroxinproduction,negativeinfluenceinreproduction,changesi
6、nthebloodetc.Almostallfoodproductscontainnitrates,becausenitratesarenaturallypresentinthesoil,thewaterandtheair.Nitratesnegativeinfluenceonhumanhealthstartswiththeirconversiontonitrites,byanenzyme(nitratereductase)[1].Thisenzymeispresentinthesaliva,inthegasterandeverywh
7、ereinthehumanbodywherepHislow.Nitritesreactwithhaemoglobinandproducemethemoglobin,whichenablestotransportofoxygenatthecellularlevel.Newbornorganismareverysensitivetometchemoglobinemybecausetheyhaveanmature(methemoglobinreductasesystem).Ifthemetchemoglobinlevelintheblood
