2、rivateBag92019,Auckland,NewZealandABSTRACT:TheintensetropicalfruitaromaofSauvignonblancwineshasbeenassociatedwiththevarietalthiols3-mercapto-hexanol(3MH),derivedfromodorlessprecursorsinthegrape,and3-mercaptohexylacetate(3MHA),arisingfrom3MHduringfermentation.Grapesandjuiceweresourcedfro
3、mfivelocationsinMarlborough,NewZealand,takinghand-pickedgrapesandsamplesatfourstagesduringthemechanicalharvestingprocessandpressing,whichwerethenfermentedinreplicated750mLbottles.Witheachsetofjuices,thehighestconcentrationsofCys-3MHandGlut-3MHwerefoundinthejuicespressedto1bar,butthesejui
4、cesproducedwineswithlower3MHand3MHAconcentrations.Withthreeofthejuices,therewasanincreaseinvarietalthiolcontentforwinesmadefromjuicesthathadbeenmachineharvestedcomparedtothehand-pickedsamples,whichmatchedearlierfindingsoflower3MHand3MHAlevelsinwinesmadefromhand-pickedgrapes.Juicesthatwer
