5、droplets.Exceptforitsroleasastericbarrier,littleisknownabouttheinsitupropertiesofthisinterfacialstructure.Inthisstudy,newinsightsintotheadsorbedlayerareprovidedbydirectmicrometre-scalemeasurements.Atlowcrudecontentinthebulkwhere,accordingtointerfacialtensionisotherms,th
6、ereshouldbelittleornosurfactantsonthedropletsurface,theadsorbedlayerdisplayspronouncedrigidityandiscapableofpreventingcoalescenceandcoagulationofthedroplets.SuchinterfacesarehighlydissipativeandcanbewelldescribedbytheBoussinesq–Scrivenmodel.Asthesupplyofsurfaceactivemat
7、erialsinthebulk(i.e.thecrudecontent)increases,theadsorbedlayertransformsfromarigidstructuretoafluidinterface.Thisfluidlayercontinuestoinhibitcoalescence,althoughsignsofweakinterdropletadhesionbegintoappear.Underareacompression,thefluidinterfacewilldischargemicrometre-sized
