3、EC-)areafamilyofiron-containingenzymesthatcatalysethedioxygenationofpolyunsaturatedfattyacidsinlipidscontainingacis,cis-1,4-pentadienestructure.Itcatalysesthefollowingreaction:fattyacid+O2=fattyacidhydroperoxide.LOXsarealsothoughttoplayanimportantroleinthefor

4、mationofdesirableorundesirableflavorandaromainmanyplantproducts.　　Lowtemperature,lowO2orhighCO2wasreportedtoregulatetheloxgeneexpression,especiallythelowO2treatmentwhichwasabletosuppresstheaccumulationofagingproductionincludingthetotalacidandfattyacid.Therefo

6、entoredbyamultidisciplinaryscienceteamledbyDr.SangeetaDhaubhadel.TheotherteammembersincludeDr.YuhaiCui,Dr.RobertForsterandDr.DavidfromAAFC-PARC.Dr.DhaubhadelisaseniorAAFCresearchscientistwithover30yearsworkingexperienceandhehasmorethan10yearsofexperienceinmol

7、ecularplantvirology,molecularbiologyandgeneticengineering.Hisresearchareashaveinvolvedinplantbreeding,planttissuecultureandmolecularsoybeanbreeding.Dr.CuiandMr.　　Forsteraretwomajortechnicalsupportstaffsintheresearchteam.Dr.Forsterisanexpertwith20yearsofexperi
