4、reofasubstanceormediumbelowtemperatureofitsenvironment(Anonymous,2001).Refrigerationisaprocessofloweringthetemperatureandmaintainingitinagivenspaceforthepurposeofchillingfoods,preservingcertainsubstances,orprovidinganatmosphereconductivetobodilycomfort.Storingperishablef
5、oods,pharmaceuticals,orotheritemsunderrefrigerationiscommonlyknownascoldstorage.Suchrefrigerationchecksbothbacterialgrowthandadversechemicalreactionsthatoccurinthenormalatmosphere.Themostimportantfactorincoldstorageisambienttemperature.Asarule,thetemperatureincoldstorage
6、ishigherthan1-2℃,whichisthefreezingpointtemperatureofstoredfruitandvegetable.Storedproductmustnotbefreezinginthecoldstorage(CemerogluandAcar,1986).Ozkol(1999)reportedthatthereisheattransferinmanyplacesofcoolingsystemandthattheheattransferwidelytakesplaceduringtheprocess.
