4、tforlactoferrin.Lossoftryptophanbecauseofphoto-oxidationwaswell-correlatedwiththeformationofthetryptophanoxidationproducts,N-formylkynurenineandkynurenine.Changesatthetertiaryproteinstructurelevelwereobservedafterphoto-oxidationoftheglobularproteins,wheretryptophanfluorescenceemissioni

5、ndicatedunfoldingofR-lactalbuminand-lactoglobulin,whereaslactoferrinachievedamorecompacttertiarystructure.ChangesinsecondarystructurewereobservedforR-lactalbuminand-lactoglobulin,whereasthesecondarystructureoflactoferrindidnotchange.PolymerizationofR-and-caseinandoflactoferrinwasob
