4、emanufactureofsilvercarpsausagewereinvestigated.Determinationofsevendifferentbiogenicamineswascarriedoutbyreverse-phasehighperformanceliquidchromatography(RP-HPLC)withfluorometricdetection.Qualityparametersofsilvercarpsau-sage,namelypH,wateractivity,microbialcounts,a-aminonitroge

5、nandtotalvolatilebasenitrogen,weredetermined.Inadditiontothese,aminoacidcontentswereanalyzedtonotechangesofaminoacidsinsilvercarpsausages.MixedstarterculturesdecreasedthepHquickly,inhibitedthegrowthofcontaminantmicroorganismspresentintherawmaterials,andsuppressedtheaccumulation
