1、中国农学通报2012,28(28):297-303ChineseAgriculturalScienceBulletin云南西双版纳7个产地大树茶（晒青毛茶）品质分析官兴丽，肖海军，梁俊涛，陈孝权，刘敏，白兵，赵亚华（大益集团勐海茶业有限责任公司技术中心实验室，云南勐海666200）摘要：为了更好地认识和利用西双版纳州大树茶，为大树茶研究提供科学的理论基础，采用分光光度计法及高效液相色谱法测定云南西双版纳7个产地大树茶（晒青毛茶）在春、夏、秋3个季节的生化成分，并用感官审评方法评定各项品质因子。结果表明，不论是春季、夏季
2、、秋季采制的7个产地大树茶内含物质均很丰富；同一季节，7个产地大树茶的水浸出物、茶多酚、可溶性糖含量差异显著。HPLC分析发现，7个产地大树茶氨基酸、儿茶素组成无显著差异；茶氨酸占总量的50%以上，酯型儿茶素占总量的60%以上。三迈大树茶氨基酸、可溶性糖含量较高。大多数产地茶多酚、儿茶素含量夏、秋茶高于春茶；氨基酸含量春茶最高，其次是秋茶、夏茶；可溶性糖、咖啡碱含量春茶高于夏、秋茶。感官审评发现7个产地大树茶在汤色、香气、滋味、叶底各方面表现良好。关键词：西双版纳；大树茶；品质中图分类号：S571.1文献标志码：A论文
