1、中国农学通报2012,28(28):297-303ChineseAgriculturalScienceBulletin云南西双版纳7个产地大树茶(晒青毛茶)品质分析官兴丽,肖海军,梁俊涛,陈孝权,刘敏,白兵,赵亚华(大益集团勐海茶业有限责任公司技术中心实验室,云南勐海666200)摘要:为了更好地认识和利用西双版纳州大树茶,为大树茶研究提供科学的理论基础,采用分光光度计法及高效液相色谱法测定云南西双版纳7个产地大树茶(晒青毛茶)在春、夏、秋3个季节的生化成分,并用感官审评方法评定各项品质因子。结果表明,不论是春季、夏季
2、、秋季采制的7个产地大树茶内含物质均很丰富;同一季节,7个产地大树茶的水浸出物、茶多酚、可溶性糖含量差异显著。HPLC分析发现,7个产地大树茶氨基酸、儿茶素组成无显著差异;茶氨酸占总量的50%以上,酯型儿茶素占总量的60%以上。三迈大树茶氨基酸、可溶性糖含量较高。大多数产地茶多酚、儿茶素含量夏、秋茶高于春茶;氨基酸含量春茶最高,其次是秋茶、夏茶;可溶性糖、咖啡碱含量春茶高于夏、秋茶。感官审评发现7个产地大树茶在汤色、香气、滋味、叶底各方面表现良好。关键词:西双版纳;大树茶;品质中图分类号:S571.1文献标志码:A论文
