2、ntheyear2004，Chinesemeatproductionreachedto28．1％ofthewoddtotal257，500，000tons．Meanwile，theproblemexistinthefieldofthefoodsafety,hasleadtothegreatconcernofthepublic，whichmoreandmoreworryaboutthefoodsafety,aswellastheablilityofthegovernmentagencytoguaranteethesafetyofthefood．So，howtoe

3、nsurethesafetyofthefood，becomemoreandmoreimperative．HACCP(HazardAnalysisandCriticalControlPoint)system,whichissciencebasedandsystematic，identifiesspecifichazardsandmeasuresfortheircontroltoensurethesafetyoffood．HACCPisatooltoassesshazardsandestablishcontrolsystemsthatfocusonpreventi

4、onratherthanfelyingmainlyonend-preducttesting．Thisarticle，hasgivenageneralreviewoftheintroductionandimplementationofHACCPsysteminChina．Intheearly1980’s，ChinastartedtointroduceandstudyHACCPsystemwithinthecountry，andhasnowlastmorethan20years．Atpresent,HACCPsystemjswidelyappliedinalmos
