2、ntheyear2004,Chinesemeatproductionreachedto28.1%ofthewoddtotal257,500,000tons.Meanwile,theproblemexistinthefieldofthefoodsafety,hasleadtothegreatconcernofthepublic,whichmoreandmoreworryaboutthefoodsafety,aswellastheablilityofthegovernmentagencytoguaranteethesafetyofthefood.So,howtoe
3、nsurethesafetyofthefood,becomemoreandmoreimperative.HACCP(HazardAnalysisandCriticalControlPoint)system,whichissciencebasedandsystematic,identifiesspecifichazardsandmeasuresfortheircontroltoensurethesafetyoffood.HACCPisatooltoassesshazardsandestablishcontrolsystemsthatfocusonpreventi
4、onratherthanfelyingmainlyonend-preducttesting.Thisarticle,hasgivenageneralreviewoftheintroductionandimplementationofHACCPsysteminChina.Intheearly1980’s,ChinastartedtointroduceandstudyHACCPsystemwithinthecountry,andhasnowlastmorethan20years.Atpresent,HACCPsystemjswidelyappliedinalmos
5、teveryaspectoffoodprocessingfacilities.TheChinesegovernmenthasbeentakingakeyroleintheintroduction.promotionofHACCPsystemespeciallyjllthefdedoffoodprocessingplant.Therelevantgovernmentagencies,suchasGeneralAdministrationofQualitySupervisionandInspectionandQuarantineofthePeople'sRepub
6、licofChina(AQSIQ),CertificationandAccreditationAdministrationofthePeople’sRepublicofChina(CNCA),lean,tryofAgricultureOVlOA),MinistryofHealth(MOH),FoodandDrugAdministrationofthePeople'sRepublicofChina(CFDA)havemadegreateffortswithintheirownjurisdietions.Inaddition,industrialassociati
