2、之“正”则凝结着先祖前贤对于人与自然关系的独特情怀与伦理精神追求。传统之“味”的承传和发展体现着鲜活的伦理生活史。饮食伦理文化是经由特殊的人文类型与生态情境塑造的。陕北地处黄土高原中部，千沟万壑、交通不便。这里频繁遭受游牧民族与中原王朝间的战争洗礼，加之过度开垦，致使本来脆弱的自然环境遭受重创，生态平衡被破坏，水土流失，植被稀少。环境的改变对人们的日常生活造成了巨大影响，也使陕北饮食文化的传承、伦理道德的构建形成了鲜明的区域特色。不同于关中饮食文化的精致、细腻，陕北黄土高原的饮食文化更多的是就地取材，通过熬、蒸、煮、炖、烤等传统烹饪技艺

3、做出具有本地特色的饮食品样。陕北饮食民俗看似粗鲁的大块吃肉、大碗喝酒的饮食文化特点，融合了游牧民族饮食文化与中原饮食文化的特征。然而，独具特色的陕北饮食伦理文化，造就了陕北人待人热情、豪爽仗义、厚道朴实等伦理性格特点。陕北饮食伦理文化内容包含个体、家庭及社会饮食伦理文化等丰富层面，具有多元性、包容性、粗犷性和生态性等基本特征。发掘、整理、研究及总结陕北饮食伦理文化的内容，对于传承陕北饮食伦理文化，具有深远的历史意义，也对弘扬中华优秀传统文化具有积极作用。关键词：陕北，饮食伦理文化，环境，启示IIIABSTRACTABSTRACTItis
