2、d26March2002;Acceptedinrevisedform18September2002)SummaryInthisresearchthepossibleuseofcoconutasrawmaterialtoproduceready-to-eatfruitwasinvestigated.Thedevelopmentofspoilagemicro-organismsinpackagedcutcoconutstoredat4,12,21and24°Cwasmonitored.Spoilageofminimallyprocessedcoconutwas
3、correlatedwithhighlevelsofmesophilicbacteriaandwasstronglydependentontemperature;howeverthemodifiedatmosphere,createdbyrespirationofthefruitwhencontainedunderafilmbarrier,couldbefundamentaltothedeterminationoftheproduct’sshelf-life.Theshelf-lifeoftheproductwaskineticallymodelledinor
4、dertochecktheeffectsofstoragetemperatureandtoassessthemicrobialindicesmostrelevantforhygieneandqualityoftheproduct.Ourresultssuggestthatmathematicalmodellingcouldallowmanufacturestorelyonmoreobjectiveparameterstodeterminetheshelf-lifeoftheirproducts.KeywordsPredictivemodelling,read
