2、thcarefunctionofWuyirockteaandcontainedlaetobacillus,notonlyhadtheoxidationresistencefunctionofrockteabeenpreserved,butalsohaditshealthcarefunctionbeenincreased,itsflavorandtastewasspecial,itscommercialvalueWasexpectedtobeincresed.Gallocatechingallate(GCG)andcaffeine,twomainactiveingredientsi

3、nWuyirocktea,theirvariationbeforeandafterfermentationhadbeenstudied.Theirinfluenceontheoxidationresistanceactivity:eliminateDPPHfreeradical(DPPH。),superoxideanion(02。.)andchelationferrousion(FEC)hadbeeninvestigatedalso.Mainresultswereasfollows:(1)RockteaextractionwasinoculatedwithStreptococcu

4、sthermophilus,fermentedatthetemperatureof37"C,theoptimalfermentationtimeWas48h,viablecountswerehighest,whichreachedto2.24x109cfu/mL.(2)HighPerformanceLiquidChromatographyanalysisindicatedthat:wheninoculationquantitywas6.8E+03cfu/mL,theconcentrationsofGCGandcaffeinereachedtohighestlever,whichw

5、as0.25mg/gand16.76mffgrespectively,andbothwerelowerthanunfermentedbeverage(O.29mg/gand18.23mg/grespectively),theconcentrationofGCGhadtendencyofdecreasewiththeincreaseinthequantityofinoculationlactobacillus,whilethedecreaseincaffeninWasnotobvious.(3)Oxidationresistanceactivityanalysisindicated

6、that:duringtheconcentrationextentof250~4000ppm,theabilityofteaextractiontoeliminateDPPHfreeradicalsuperoxideanionandchelationferrousionwas93.78%、96.65%and85.67%relatively.啪lileafterfermentationbylactobacillus,theOxidationresistanceactivitydecreasedto89.74%、87.71%and85.67%relatively.(4)neresea
