2、tandlowcholesterol.Eggs,richincholesterolandprotein,aremuchnutritious.Theaminoacidoftheeggproteincansufficientlysatisfythephysiologicalneedsofhumanbodiesandbeeasilyabsorbedduetoitsappropriateproportion,withanabsorptionratehigherthan98%.Comparedwithchicken,porkandbeef,eggsarethecheapestwhicharerichi
3、nhigh-qualityanimalprotein.Egghasbecomeoneofthecommonestfoodinpeople’slifeduetoitshighnutritivevalueandcheapprice.Theauthorhasdiscussedthescale,costandcooperationofbroiler/layerbreedingbothathomeandabroadbylookinguptheyearlyChinaStatisticYearbook,ChinaAnimalIndustryYearbookandFoodandAgriculturalOrg
4、anizationoftheUnitedNationsandrelatedliterature.Itshowsthat:(1)Generally,theeggyield,broileryield,themountofbroilersslaughteringandpoultrybreedingstockattheendofyearhavegrownslowly.In2013,theeggyieldwas28.761milliontons,andthechickenyieldwas17.984milliontons,increasingby5.6%and33.08%respectivelycom
5、paredwiththatof2004.Theamountofbroilersforslaughteringreached11.9billion,andpoultrybreedingstockreached5.71billion,increasingby31.2%and10.62%respectivelycomparedwiththatof2004.Thoughourcountryisthesecondlargestbroilerproducerintheworld,thepercapitabroilerconsumptionislow.(2)Thescaleandyieldofsmall-
6、sizedbroilerfarmshavedecreasedyearafteryear,whilethenumberofmedium-sizedandlargebroilerfarmshavetendedtoincreasecontinuously.In2013,thenumberofsmall-sizedbroilerfarmsdecreasedby19.13%comparedwiththatof2007,whilethenumbersofmediumandlarge-sizedbroilerfarmsincreasedby13.83%and2.23timescomparedwiththa
