2、ngJune2010乳源活性肽饮料制备工艺的研究摘要乳源活性肽作为生理活性物质可以肓接被动物吸收利用,具有多种人体代谢和生理调节功能,可以调节植物神经系统、活化细胞免疫机能、改善心血管功能和抗衰老等生理活性,还具有激素调节、抗菌、抗病您、传递信息、促进矿物质的吸收、排毒、解酒、滋肝、养胃、养颜等作用。本文对乳源活性肽饮料的制备工艺进行了研究,并且确定了此饮料的貝体配方。乳源活性肽饮料的最佳配方,以双酶水解正交试验为指标,最终确定了乳蛋片水解程度的影响因素。试验结果证明:牛乳蛋白的最佳水解酶是碱性蛋白酶和风味蛋白酶,最佳水解条件是碱性蛋白臨用量70mg/L^风味蛋白陋用量180mg/L、
3、pH6.5、温度65°C、水解5h。经感官评价得出乳源活性肽饮料的最佳配方为,白砂糖的添加量为9%、柠檬酸的用量为0.2%.复合香精的添加量为0.07%、稳定剂的添加量为0.2%时产品综合质量最好,口感最佳。关键词:牛乳蛋白;活性肽;酶解StudyonthePreparationofmilk-derivedpeptidesofdrinksAbstractMilk-dcrivcdpeptidesasaphysiologicallyactivesubstancecanbedirectlyabsorbedandusedbyananimalwithavarietyofhumanmetaboli
