3、province.Basedonthis,theauthormakesanin-depthexplorationonthelacticacidbacteriainoculationpickledmustardofZhejiangregion.Inthispaper,thehigh-densitycultureconditionswereoptimizedforthreestI.ainsoflaboratorystrains(D,M,Z),includinglacticacidbacteriacultureofenvironmentalfactors(tempe
4、rature,pH,inoculumsize)andmediumcomposition(includingcarbonandnitrogensources).Theoptimizationmadethreestrainsoflacticacidbacteriareached1olocfu/mL.Thethreestrainsoflacticacidbacteriaculturedinhigh-density(numberofM,Z,D)wereinoculatedinthetubermustard.TheresultshowedthatthepHvalue,t
5、henumberoflacticacidbacteriaandnitritecontentweresignificantlybetterthanthecontrolgroups.Thesensoryevaluationorthogonalanalysisidentifiedastheoptinmmtechnology:freshvegetablewithsaltamountwas8kg/100kg,inoculum5mL/Kg,andlactobacillusstrains(Z)waschosed.Thebeststrain(Z)wasinoculatedin
6、thepickledprocessofZhacaiatthelowsaltcondition.LAB(Z)wasinoculatedinthepre-pickleprocess,orboththepre-pickleprocessandthepre-pickleandre-pickleprocess.ThepHvalue,thenumberofL。M3,andthenitritecontentinthepickleprogress,aswellastheaminonitrogenmustardcontentandtheflavorcomponentsofthe
