1、本科毕业设计(论文)魔芋苹果复合颗粒纤维饮料研制学院轻工化工学院专业食品科学与工程摘要随着人类社会的发展,人们对食品和饮料的选择开始有了较高的要求,讲求营养,个性、品味。逐渐,膳食纤维的保健作用日益受到重视。为了促进人民身体健康、提高食品工业在国内国际市场上的竞争力。将以魔芋精粉和苹果为主要原料,进行魔芋苹果复合颗粒纤维饮料研制。魔芋块茎干物质主要成分为魔芋葡甘聚糖,是一种优良的水溶性膳食纤维。故将魔芋精粉溶于水可以形成弹性凝胶,再与苹果汁配合,可制成魔芋,苹果颗粒纤维饮料。将以魔芋精粉和苹果为主要原料,进行魔芋苹果复合颗粒纤维饮料研制,通过单
2、因素试验、正交试验和通过感官评定断来研究合理配方。得到了魔芋苹果复合颗粒纤维饮料的最佳工艺配方为(以质量百分比计):魔芋凝胶颗粒12%,青苹果果汁60%,蔗糖30%,琼脂0.5%,山梨酸钾0.5%,杀菌温度100℃,杀菌时间约15min.魔芋苹果膳食纤维饮料的开发开辟了魔芋苹果消费新途径。膳食纤维饮料不仅“口感怡人”,而且弥补了人体膳食纤维日常吸收过程中的缺乏,使得纤维的营养价值更加广泛的被我们人类摄入。魔芋苹果膳食纤维饮料是纤维饮料走向嗜好性饮料品的一个典型。关键词:魔芋精粉,苹果,纤维饮料,研制AbstractAlongwiththedev
