2、、F33)发酵桑果酒的发酵规律,以期筛选出合适的桑果酒发酵菌种,为桑果酒的研究和生产提供参考。【方法】以“大十”品种桑果果汁为原料,分别接种不同酵母,在25℃下进行发酵试验,定期检测果酒的pH、可滴定酸、可溶性固形物、酒精度,并评定成酒品质。【结果】LAFFoRT干酵母F33发酵的桑果酒酒体为紫红色,原酒未发生明显褐变,酒香协调;该酵母起酵快,可溶性固形物在5d内迅速降至稳定值,酒精度则上升至12.5%v01,在发酵过程中产酸较其他菌种少;F33接种量不影响其对糖的利用及酒精的生成,O.02%的接种量下发酵液p
